Steamed Sea Bass Asian Style
Ingredients
- Shallot - 4 pieces
- Garlic - 1 clove
- Mild Chili Spice - 1 piece
- Grated Ginger Root - 1 piece
- Soy Sauce - 1½ tablespoons
- Rice Vinegar for Sushi - 1 tablespoon
- Sesame Oil - 1 teaspoon
- Brown Sugar - ¼ teaspoon
- Sea Bass - 28.2 oz
- Peanut Butter - 1 tablespoon
- Jasmine Rice - to taste
Step by Step guide
Step 1
In a small bowl, mix the thinly sliced shallots, ginger cut into thin strips, thinly sliced garlic, and the deseeded and thinly sliced chili pepper. In another bowl, combine the soy sauce, vinegar, sesame oil, and sugar.
Step 2
Rinse the fish under cold water and pat dry with a paper towel. Using a sharp knife, make 3 cuts about 8-10 cm long and 1 cm deep on both sides of the fish.
Step 3
Place a third of the sliced mixture with shallots on the bottom of a heatproof dish, place the fish on top, distribute another third inside the fish, and sprinkle the remaining third on top. Drizzle with the soy sauce mixture and place in a bamboo steamer.
Step 4
Set over a wok, pour in water, bring to a boil, and set to medium heat. Cover and cook for 12-15 minutes until the fish is cooked through.
Step 5
Heat the peanut oil in a small saucepan over high heat until it starts to smoke. Drizzle over the fish and carefully remove the dish from the steamer. Serve with boiled jasmine rice.
