Steamed Tiger Shrimp on a Potato Plank with Truffle Oil
Ingredients
- Tiger shrimp in brine - 9 pieces
- Garlic - 1 clove
- Basil - 1 teaspoon
- Dried Chamomile - 1 teaspoon
- Olive Oil - 3 tablespoons
- Salt - to taste
- White Pepper (whole) - a pinch
- Salad Potatoes - 14.1 oz
- Milk - 3 fl oz
- Butter - 3 tablespoons
- Truffle Oil - 2 tablespoons
Step by Step guide
Step 1
Clean the shrimp, leaving the tails on, rinse, and dry on paper towels.
Step 2
Crush the basil, marjoram, garlic, pepper, salt, and olive oil in a mortar until it forms a paste.
Step 3
Marinate the shrimp in the paste for 10 minutes.
Step 4
Peel and boil the potatoes until cooked. Drain the water, add milk, salt, butter, and, if desired, truffle oil. Mash into a puree. Cover to keep warm until serving.
Step 5
Preheat the steamer for 2–3 minutes. Lightly grease the steamer tray with olive oil. Place the shrimp and steam for 7 minutes.
Step 6
Plate the puree, place the shrimp on top, and drizzle with the juices released during steaming.
