Ingredients
- Soy Sauce - 3 tablespoons
- Apple Wine - 1 tablespoon
- Veal Tenderloin - 10.6 oz
- Corn Starch - 1 tablespoon
- Ground Black Pepper - 1 tablespoon
- Ground ancho chili pepper - 4 pieces
- Peanut Butter - 2 tablespoons
- Grated Ginger Root - 1 piece
- Garlic - 4 cloves
- Coarse Salt - to taste
- Rice - to taste
Step by Step guide
Step 1
Slice the meat into thin strips and transfer to a bowl. Add 2 tablespoons of soy sauce, rice wine, cornstarch, and black pepper. Mix well.
Step 2
Bring a small pot of water to a boil. Remove seeds from the chilies and slice them diagonally. Blanch in boiling water for 1 minute. Drain.
Step 3
Heat a wok over high heat until smoking. Add peanut oil and spread it over the surface. Add minced ginger and stir-fry for 30 seconds.
Step 4
Spread the meat in an even layer and fry without stirring for 1 minute. Add the remaining soy sauce, thinly sliced garlic, and leeks, and stir-fry for another 2 minutes until the leeks are tender.
Step 5
Add the chilies and cook for another minute. Season with salt and serve with boiled rice.
