Ingredients
- Udon Noodles - 14.1 oz
- Chicken Egg - 2 pieces
- Soy Sauce - 2 fl oz
- Leek - 1 piece
- Peeled Cooked Shrimp - 6 pieces
- Sprouted legumes - ¼ glasses
- Tofu - 3.9 oz
- Lime - 1 piece
- Vegetable Oil - 2 spoons
- Roasted Peanuts - 0.5 oz
Step by Step guide
Step 1
Cook the noodles in boiling water for 2-3 minutes until tender. Drain and rinse under cold water.
Step 2
In a bowl, place the eggs and soy sauce, then add the chopped leeks, diced shrimp, bean sprouts, and noodles. Heat a wok over medium heat for 1-2 minutes until it starts to smoke, then add vegetable oil. Add the cubed tofu and fry for 2 minutes until golden brown.
Step 3
Add the noodle mixture to the wok and stir-fry for another 3-4 minutes, until the eggs are cooked and the leeks are tender.
Step 4
Divide into 2 bowls, drizzle with lime juice, and sprinkle with crushed peanuts.
