Ingredients
- Strawberry - 8.8 oz
- Couscous - 8.8 oz
- Arugula - 4.2 oz
- Feta cheese - 5.3 oz
- Meyer Lemon Juice - 1 tablespoon
- Salt - to taste
- Olive Oil - to taste
Step by Step guide
Step 1
Pour the couscous into a bowl, add salt, drizzle with olive oil (1–2 tablespoons), and mix with a fork. Boil water and pour it over the couscous so that the liquid covers it by about 1 cm. Cover the bowl with plastic wrap and let it sit for 5 minutes, then repeat the process once more.
Step 2
Wash the arugula, sort it, and dry it. Wash the strawberries, remove the stems, and dry them. Cut the berries and drizzle with lemon juice.
Step 3
In a small bowl, combine the dressing ingredients and mix vigorously with a fork. Adjust to taste.
Step 4
Fluff the couscous with a fork and mound it in a salad bowl. Top with arugula and strawberries, and season with pepper. Crumble the feta cheese on top. Drizzle the salad with lemon juice and olive oil. Serve without mixing.
