Ingredients
- Strawberries - 15.9 oz
- Cucumbers - 3 pieces
- Ground Cardamom - ½ teaspoon
- Salt - to taste
- Sugar - 3 teaspoons
- Heavy cream - ½ cup
- Freshly squeezed lemon juice - 1 teaspoon
- Roasted pistachios - ¼ cup
- Ground cayenne pepper - a pinch
Step by Step guide
Step 1
In a medium bowl, mix the strawberries, cucumbers, cardamom, a pinch of salt, and 1 teaspoon of sugar. Let it sit for 10 minutes to allow the sugar to dissolve and the ingredients to marinate.
Step 2
While the strawberries are marinating, mix the sour cream, lemon juice, remaining 2 teaspoons of sugar, and a pinch of salt in a small bowl and set the lemon cream aside.
Step 3
In a food processor, blend the pistachios, cayenne pepper, and a pinch of salt until they are finely chopped (but do not blend too long to avoid making nut butter).
Step 4
Plate the fruit salad and spoon the lemon cream over it, then sprinkle the salad with herbs and pistachios.
