Description

How many times have we made summer lemonade using strawberries, lime, and mint! It's a tried-and-true combination. Here, it's the same but in the form of kissel and much more nutritious.

Ingredients

  • Strawberry - 10.6 oz
  • Lime - 2 pieces
  • Fresh Mint - 5 sprigs
  • Sugar - 2.5 oz
  • Starch film - 1.4 oz
  • Water - 1¼ l

Prepare all the ingredients.

Serve the strawberry jelly chilled, garnished with mint and lime.

Cut the strawberries in half or into quarters, depending on their size.

In a pot, bring 1 liter of water to a boil with sugar.

Add the strawberries, bring to a boil, and cook for 5 minutes.

Add mint leaves (set aside a few for garnish), the zest and juice of 1 lime.

Blend the compote with an immersion blender.

Strain through a fine sieve, leaving only the strawberry seeds in the sieve. Return to the heat.

Mix the remaining water with the starch until smooth.

Pour the starch solution into the pot and bring it back to a boil, whisking constantly. When the jelly becomes smooth and starts to thicken, remove it from the heat.
