Ingredients
- Olive Oil - 2 teaspoons
- Minced garlic - 3 cloves
- Onion - ½ head
- Dried tomatoes - 2 pieces
- Sweet Pepper - 2½ pieces
- Breadcrumbs - ½ cup
- Canned tomatoes - 7.1 oz
- Ground Black Pepper - ¼ teaspoon
- Dry Mustard - ½ teaspoon
- Mozzarella Cheese - 2.5 oz
- Parsley - to taste
Step by Step guide
Step 1
Preheat the oven to 180°C.
Step 2
Heat the oil in a medium-sized skillet. Sauté the garlic and onion until the onion becomes translucent.
Step 3
Add the dried tomatoes, chopped sweet pepper, and breadcrumbs, and sauté until the pepper softens.
Step 4
Add the canned tomatoes in small portions, allowing the liquid to absorb before adding the next portion. Then add the pepper and mustard.
Step 5
Spoon the prepared mixture into the halves of the bell peppers, sprinkle with grated cheese, and bake for 10 minutes at 180 degrees.
Step 6
Sprinkle with parsley if desired.
