Ingredients
- Eggplants - 17.6 oz
- Lean Beef - 10.6 oz
- Tomatoes - 8.8 oz
- Hard Cheese - 3.5 oz
- Onion - 5.3 oz
- Garlic - 3 cloves
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the eggplants, cut them in half lengthwise. Remove the flesh from each half.
Step 2
Salt the resulting halves and let them sit for 30 minutes. Then rinse in cold water (this is done to prevent bitterness). Soak the flesh in cold water for 30 minutes (to prevent bitterness and to absorb less oil during frying).
Step 3
Finely chop the onion and garlic. Squeeze the flesh (after soaking in cold water) and chop it finely. Dice the tomatoes.
Step 4
Sauté the onion and garlic in vegetable oil. Add the ground beef and fry well (about 10 minutes over medium heat). Add the tomatoes and eggplant flesh, season with salt and pepper, and cook until done (about 8–10 minutes).
Step 5
Fill the eggplant halves with the filling. Place in a baking dish.
Step 6
Grate the cheese on a fine grater. Sprinkle the eggplants with cheese and place in the oven.
Step 7
Bake at 356°F for 30–35 minutes.
