Stuffed Meat Roll
Ingredients
- Feta cheese - 5.3 oz
- Pitted Wild Apricots - 3.5 oz
- Walnuts - 2.6 oz
- Herbs - to taste
- Chicken Broth - 17 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - to taste
- Pork tenderloin - 31.7 oz
Step by Step guide
Step 1
Cut the meat lengthwise without cutting all the way through, creating a pocket, and pound one side.
Step 2
Season with salt and pepper, and sprinkle chopped herbs (I used parsley and dill) on half of the meat.
Step 3
If the prunes are hard, soak them in advance and chop them, but not too finely.
Step 4
Chop the walnuts with a knife.
Step 5
Break the feta cheese into small pieces.
Step 6
Layer the prunes, feta cheese, and walnuts on the herbs, then roll it up starting from the filling side.
Step 7
Tie the roll with string around and once lengthwise.
Step 8
Sear in olive oil until golden brown on all sides.
Step 9
Transfer to a baking sheet, pour in 500 ml of meat broth (I diluted a meat cube), cover with foil without wrapping it tightly, and place in the oven at 320°F for 2 hours.
