Ingredients

  • Pickled Chanterelles - 6 pieces
  • Orange Bell Peppers - 2 pieces
  • Celery stalk - 2 pieces
  • Marinated cherries - 3 pieces
  • Walnuts - ½ cup
  • Smoked salt - ½ teaspoon
  • Herbes de Provence - ½ teaspoon
  • Macadamia Nuts - 1 cup
  • Water - ¾ cup
  • Starch film - 3 cups
  • Meyer Lemon Juice - 1 tablespoon
  • Onion - 1.1 oz
  • Salt - 1 teaspoon
  • Turmeric - a pinch

Step by Step guide

Step 1

Carefully remove the stems from the mushrooms.

Step 2

Finely chop the vegetables and crush the nuts. Mix all the filling ingredients and stuff the mushrooms.

Step 3

Transfer to a baking dish. Blend all the sauce ingredients in a blender.

Step 4

Using a pastry syringe or a regular bag, drizzle the sauce over the mushrooms.

Step 5

Place in a preheated oven (356°F) for 25–30 minutes.
