Description

A signature dish of Bulgaria. For this dish, they even sell a special device called a chushkapek, which looks very much like a Soviet donut mold with round compartments, but is the size of a large pot. However, it's not difficult to make it at home without any additional gadgets — the Bulgarian recipe differs from the familiar one only in the spices: paprika and savory are usually added to the filling, and if you can't find savory, you can use thyme instead. Also, in the Bulgarian version, tomatoes are included in the filling rather than being used in a sauce. We once got this recipe from a restaurant called Grandma's Kitchen, and it seems that there are no Bulgarian restaurants left in Moscow since it closed down. It's a shame, as the cuisine is delicious, so we'll have to learn to make it at home.

Ingredients

  • Lean Beef - 17.6 oz
  • Sweet Pepper - 24.7 oz
  • Rice - 3.9 oz
  • Herbs - 0.5 oz
  • Tomatoes - 7.1 oz
  • Garlic - 3.5 oz
  • Olive Oil - 1 fl oz
  • Paprika - 1.8 oz
  • Campbell's Beef Broth - 1 qt
  • Thyme - 1.8 oz
  • Salt - to taste

Step by Step guide

Step 1

Rinse the rice thoroughly in plenty of water.

Step 2

Wash the onion and carrot, peel them, dice into small cubes, and sauté until they turn a pleasant golden color.

Step 3

Add the rice to the vegetables and continue to sauté everything together.

Step 4

Sauté the ground meat.

Step 5

Wash the pepper, cut off the top with the stem, and remove the seeds.

Step 6

Combine the rice, ground meat, and herbs, and use this mixture to fill the prepared peppers.

Step 7

Grill the peppers on three sides, either on a grill or in a skillet. Then, place them in a deep baking dish, add broth, and bake until cooked through.
