Stuffed Peppers with Tomatoes
Ingredients
- Sweet Peppers - 6 pieces
- Tomatoes - 5 pieces
- Basil - 1 bunch
- Garlic - 6 cloves
- Thyme - 6 sprigs
- Olive Oil - 6 teaspoons
- Freshly ground black pepper - ¼ teaspoon
- Sea Salt - ½ teaspoon
Step by Step guide
Step 1
Slice the tomatoes into very thin slices.
Step 2
Peel and thinly slice the garlic.
Step 3
Preheat the oven to 190 °C (375 °F).
Step 4
Add the basil leaves, thyme, and garlic to the tomatoes and mix everything together.
Step 5
Make a T-shaped cut along the length of each pepper, ensuring the top bar of the T is near the stem (do not cut off the stem). Through this cut, carefully remove the seeds and stuff each pepper with the tomatoes, herbs, and garlic, trying not to break the pepper.
Step 6
Place the peppers on a baking sheet, drizzle with olive oil, and season with salt and pepper.
Step 7
Bake in the preheated oven for about 20–25 minutes — the skin should brown but not blacken. Remove from the oven and let cool.
