Stuffed Pike

Ingredients

  • Pike - 3 lbs
  • Milk - 1 qt
  • Carrot - 1 piece
  • Onion - 1 head
  • Bay leaf - 1 piece
  • White bread - 7.1 oz
  • Sugar - a pinch
  • Egg white - 1 piece
  • Parsley - 1.1 oz
  • Dill - 0.4 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Butter - 0.7 oz

Step by Step guide

Step 1

Prepare all the ingredients.

Step 2

Remove the scales from the caught pike. It is better to do this with a wide knife: lift the scales from the tail overlapping onto the knife so that they lay on it.

Step 3

Then remove the skin: make incisions at the gills, reach the backbone, cut the spinal part, and peel the skin down to the tail, also cutting the backbone at the tail and removing the bare carcass.

Step 4

Cut the carcass into slices, that is, across.

Step 5

Place the pike slices in a pot, cover them with milk, add the bay leaf, coarsely chopped carrot and onion, salt, and pepper.

Step 6

Bring to a boil and cook for 5-10 minutes, or until the pike is cooked.

Step 7

Remove the pike from the broth and strain the broth.

Step 8

Soak the bread in the broth.

Step 9

Remove the meat from the pike bones and grind it through a meat grinder along with the soaked bread.

Step 10

Add salt, sugar, pepper, and the beaten egg white to the minced meat.

Step 11

Finely chop the parsley and dill, add the herbs to the minced meat and mix well.

Step 12

Take the skin with the head, stuff it with the filling, grease a baking tray with butter, place the pike on it, and bake in the oven for 45 minutes to 1 hour at a temperature of 356°F. During baking, you can brush the pike with butter.

Step 13

Serve the pike on a festive platter, garnished with various herbs and vegetables.
