Ingredients

  • Pork tenderloin - 2 lbs
  • Fresh basil leaves - 7.1 oz
  • Orange Bell Peppers - 10.6 oz
  • Tomatoes - 7.1 oz
  • Mustard Greens - 1.8 oz
  • Minced garlic - 5 cloves
  • Dried Chamomile - 1 teaspoon
  • Spices - to taste
  • Soy Sauce - 3 fl oz

Step by Step guide

Step 1

Prepare the pork loin: trim excess fat and membranes. Make a cut along the piece of meat, lightly pound it, and season with salt and pepper to taste. Rub the inside with mustard and minced garlic, sprinkle with marjoram, and drizzle with soy sauce.

Step 2

Prepare the filling: dice the bell pepper and peeled, seeded tomatoes, and chop the blanched spinach.

Step 3

Spread the filling on the prepared meat, shape it into a roll, and secure it with kitchen twine, seasoning with spices.

Step 4

Place the resulting roll on a baking tray and bake in the oven, covered with foil, at 160°C.
