Ingredients
- Parsley - 2 stems
- Breadcrumbs - 2 tablespoons
- Olive Oil - 2 tablespoons
- Salt - to taste
- Garlic - 1 clove
- Tomatoes - 12 pieces
- Pork Mince - 5.3 oz
- Chicken Egg - 1 piece
- Veal Mince - 5.3 oz
Step by Step guide
Step 1
Cut off the tops of the tomatoes and make a concentric cut with the tip of a knife. Then, use a teaspoon to scoop out the flesh. Salt the inside of the tomatoes and turn them upside down to drain excess juice — this will take about an hour.
Step 2
Once the tomatoes are ready, mix the meat mince, finely chopped garlic, finely chopped parsley, lightly beaten egg, and breadcrumbs — season the filling with salt.
Step 3
Using a teaspoon, fill the tomatoes with the mixture, packing it down with your fingers. Pour oil into the bottom of a baking dish, place the tomatoes in a single layer with the filling facing up. Bake in a preheated oven at 356°F for 1 hour, until the filling is cooked and the tomatoes are soft.
Step 4
Serve immediately in the same dish.
