Ingredients
- Courgette - 3 pieces
- Olive Oil - 2 tablespoons
- Crab Meat - 10.6 oz
- Scallions - 0.4 oz
- Parsley - 2.1 oz
- Lemon - ½ piece
- Breadcrumbs - 2 tablespoons
- Salt - to taste
- Parmesan Cheese - 3.5 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F. Bring a large pot of salted water to a boil and immerse the zucchini for about five minutes. Remove and immediately place in a bowl of cold water to stop the cooking process. Pat dry with a paper towel and cut each zucchini in half lengthwise. Use a spoon with a sharp edge to remove the seeds and flesh.
Step 2
Chop the extracted zucchini flesh and place it in a skillet with heated olive oil. Sauté for three to five minutes and remove from heat.
Step 3
Chop the crab meat, onion, and parsley, grate the provolone cheese, and add all of this to the skillet. Season with salt and pepper, and mix well.
Step 4
Stuff the zucchini with the filling. Sprinkle with breadcrumbs and drizzle with lemon juice. Place the zucchini in a greased baking dish and bake for about thirty-five minutes, or until the filling and zucchini are golden brown.
