Description
You can substitute champignon mushrooms with porcini mushrooms.
Ingredients
- Sturgeon - 17.6 oz
- Pickled Chanterelles - 7.1 oz
- Dry White Wine - 3 tablespoons
- Tomato Puree - 3 tablespoons
- Wheat Flour - 1 teaspoon
- Vegetable Oil - 2 tablespoons
Step by Step guide
Step 1
Cut the prepared fish into pieces, pour boiling water over it, and rinse with cold water.
Step 2
Clean, rinse, and slice the champignon mushrooms (or porcini mushrooms).
Step 3
Place everything in a pot. Add salt, sprinkle with pepper, drizzle with white wine, pour in a glass of broth (or water) mixed with tomato puree, cover the pot with a lid, and cook the fish for 15-25 minutes.
Step 4
When the fish is cooked, drain the broth into another pot and prepare the sauce as for steamed sturgeon.
Step 5
Serve the fish with boiled potatoes and lightly salted cucumbers.
