- Walnuts - 1.2 oz
- Snap Peas - 17.6 oz
- Grapeseed Oil - 2 tablespoons
- Watercress - 1 bunch
- Mint Leaves - 0.7 oz
- Turnips - 3.5 oz
- Salt - 2 teaspoons
- Balsamic Vinegar - 2 tablespoons
- Homemade Cheese - 3.9 oz
Step by Step guide
Step 1
Place the walnuts in the oven preheated to 347°F for 5-8 minutes, then immediately transfer them to a bowl with grapeseed oil while still warm.
Step 2
Slice the radishes into thin rounds, chop the mint leaves finely, and roughly chop the watercress.
Step 3
Add the sugar snap pea pods to a pot of salted boiling water and cook for about 1-2 minutes. Once the peas turn bright green, drain them and immediately transfer to an ice bath. Once cooled, dry the pods and slice them diagonally.
Step 4
Combine the peas with the radishes, watercress, mint, and homemade cheese (or ricotta). Add the walnuts with the grapeseed oil.
Step 5
Just before serving, season the salad with vinegar and salt.
