Ingredients
- Couscous - 1 cup
- Water - 1½ cups
- Courgette - 1 piece
- Orange Bell Peppers - 2 pieces
- Celery stalk - 3.5 oz
- Sweet Corn Sticks - 3.5 oz
- Chopped Sage Leaves - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Ranch Dressing - to taste
Step by Step guide
Step 1
Pour the couscous into a pot and add 1.5 cups of boiling water. Cover with a lid and let it sit for 10 minutes. Fluff with a fork and cool to room temperature.
Step 2
In a large bowl, combine the couscous with finely chopped zucchini, 1 finely chopped red bell pepper, corn kernels, finely chopped celery, and parsley. Season with salt and pepper to taste and dress with ranch dressing. Mix well.
Step 3
Slice the remaining large red bell pepper into thick rings and place one ring on each plate. Fill each ring with the salad and serve.
