Summer Italian Pasta
Ingredients
- Chives - to taste
- Parsley - to taste
- Fresh Mint - to taste
- Butter - 3 oz
- Green Peas - 14.1 oz
- Carrot - 7.1 oz
- Courgette - 7.1 oz
- Pasta (corkscrew) - 14.1 oz
- Olive Oil - 2 tablespoons
- Chinese green beans - 7.1 oz
- Citrus Zest Mix - to taste
- Basil - to taste
Step by Step guide
Step 1
Melt the butter with parsley, chives, and mint, and place the mixture in a warm spot.
Step 2
Then, shell the peas, wash and chop the carrot, and chop the zucchini and green beans.
Step 3
Boil 2 large pots of water (one for the vegetables, the other for the pasta). Salt the water, add the pasta, and cook for 10–12 minutes until done.
Step 4
While the pasta is cooking, add the carrot to the other pot and cook for 2 minutes. Then add the green peas, beans, and zucchini, and cook for another 3 minutes.
Step 5
Drain the pasta and vegetables. Return the pasta to the pot, add the olive oil, half of the butter with herbs, lemon zest, and juice. Add the vegetables to the pot, mix, and season with salt and pepper.
Step 6
Serve the pasta on plates, sprinkle with black pepper, and garnish with basil to taste.
