Summer Tagliatelle with Green Beans
Ingredients
- Fresh basil leaves - 1.1 oz
- Garlic - ½ clove
- Chopped almonds - 1.8 oz
- Olive Oil - 2 fl oz
- Parmesan Cheese - 0.9 oz
- Lemon - ¼ piece
- Potato - 1 piece
- Chinese green beans - 4.4 oz
- Green Tagliatelle Pasta - 10.6 oz
- Green Peas - 3.5 oz
- Broccoli - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop most of the basil leaves and crush them in a mortar with a pinch of sea salt. Peel and chop the garlic, then add it to the mortar along with the almonds and grind until a smooth paste is formed.
Step 2
Add 4 tablespoons of oil, finely grated parmesan, and lemon juice. Mix and season with salt and pepper to taste.
Step 3
Peel and finely chop the potato, trim the green beans, then place both in a pot of boiling salted water along with the tagliatelle and cook according to the package instructions.
Step 4
Two minutes before the pasta is done, add the broccoli to the pot, and one minute later, add the peas. Drain the water, reserving a full cup of starchy cooking water, then mix with the prepared pesto, adding reserved water if necessary.
Step 5
Drizzle with 1 tablespoon of oil and sprinkle with the remaining basil and finely grated parmesan.
