Ingredients
- Eggplants - 1 piece
- Orange Bell Peppers - 2 pieces
- Young zucchini - 2 pieces
- Salad Potatoes - 5 pieces
- Carrot - 1 piece
- Onion - 2 pieces
- Salt - to taste
- Passata Tomato Sauce - 2 tablespoons
- Garlic - 1 clove
Step by Step guide
Step 1
Peel the carrot and cut it into large pieces. Cut the onion, potatoes, zucchini, eggplant, and pepper into large pieces as well.
Step 2
Layer in the slow cooker in the following order: onion (sauté mode), then switch to stew mode, add the carrot after 10 minutes, the potatoes after 20 minutes, and then the zucchini, eggplant, and pepper. After another 15-20 minutes, add the tomato paste and finely chopped garlic clove.
Step 3
Stew until cooked through.
Step 4
Add salt to taste.
