Sunday Roasted Pork with Cabbage
Ingredients
- Boneless pork shoulder - 11 lbs
- Nigella Seeds - 1 tablespoon
- Olive Oil - 3 tablespoons
- Onion - 3 pieces
- Fresh Bay Leaf - 10 pieces
- Apple - 4 pieces
- Spanish onions - 2 pieces
- Red Currant - 1 head
- White Sauce - 2 tablespoons
- Pear Jam - 1 tablespoon
- Celery salt - 1 piece
- Wheat Flour - 1 tablespoon
- Ocean salt - 1 tablespoon
Step by Step guide
Step 1
Preheat the oven to 220ºC.
Step 2
Score the skin into strips and place the shoulder on a large baking tray.
Step 3
Crush a good pinch of sea salt, pepper, and a tablespoon of fennel seeds in a mortar. Rub the spices with a little olive oil into the cuts in the skin. Roast for 1.5 hours.
Step 4
Meanwhile, peel the onions and cut them into quarters.
Step 5
When the time is up, drain the fat from the tray, reduce the temperature to 130° C, and tuck the onions and fresh bay leaves under the meat. Pour in 750 ml of water, then braise for about 4 hours, or until the meat is juicy and easily comes off the bone.
Step 6
After 2 hours, stir the juices around the meat, arrange the apple quarters around, and add a little more water if needed.
Step 7
40 minutes before the meat is done, peel and finely chop the red onion, and sauté it in a large skillet with a little olive oil. Cook over medium heat for 10 minutes, or until it becomes soft, stirring occasionally.
Step 8
Finely chop the cabbage in a food processor or by hand, and add it to the skillet along with a splash of vinegar, the jam, and a tablespoon of water. Cook covered for 20 minutes.
Step 9
Peel the celery root and cut it into 2 cm cubes.
Step 10
In a separate skillet, heat a little oil and fry the celery on high heat with a pinch of salt for 15 minutes or until golden. Reduce the heat to medium and fry for another 15 minutes, stirring.
Step 11
Remove the pork from the oven, transfer it to a platter with the apples, and cover.
Step 12
Place the remaining contents of the tray over medium heat and stir in the flour. If it becomes too thick, add a little water to the sauce. Strain the sauce into a gravy boat.
Step 13
Serve the meat with a side of cabbage and celery and the sauce.
