Ingredients
- Mirin - ¼ cup
- Rice Vinegar - ½ cup
- Soy Sauce - 3½ tablespoons
- Dark Sesame Oil - 1 tablespoon
- Fresh Ginger - 1 teaspoon
- Chili Oil - ½ teaspoon
- Asparagus - 24.7 oz
- Sugar - 1½ tablespoons
- Salt - 1½ tablespoons
- Short Grain Rice - 4 cups
- Dried Nori Seaweed - 8 pieces
- Toasted sesame seeds - 3 tablespoons
- Tofu - 6 oz
- Carrots - 2 pieces
Step by Step guide
Step 1
To prepare the ginger-soy sauce: Mix all ingredients in a small bowl.
Step 2
Boil the asparagus in boiling water for 3 minutes. Drain the water.
Step 3
Combine the vinegar, sugar, and salt in one bowl. Add the rice and mix well.
Step 4
Place a sheet of nori shiny side down on a bamboo mat or plastic wrap.
Step 5
Spread ½ cup of rice, leaving 1 cm from the edges of the mat. Sprinkle with 1 teaspoon of sesame seeds. Place 2 stalks of asparagus slightly off-center, add tofu and 2 tablespoons of carrots.
Step 6
Cover the rice edges with the nori sheet using the mat and roll tightly.
Step 7
Repeat the same with the remaining ingredients. Refrigerate for 3 hours.
Step 8
Cut the rolls into 6-7 pieces with a sharp knife.
Step 9
Serve with ginger-soy sauce.
