Ingredients

  • Mirin - ¼ cup
  • Rice Vinegar - ½ cup
  • Soy Sauce - 3½ tablespoons
  • Dark Sesame Oil - 1 tablespoon
  • Fresh Ginger - 1 teaspoon
  • Chili Oil - ½ teaspoon
  • Asparagus - 24.7 oz
  • Sugar - 1½ tablespoons
  • Salt - 1½ tablespoons
  • Short Grain Rice - 4 cups
  • Dried Nori Seaweed - 8 pieces
  • Toasted sesame seeds - 3 tablespoons
  • Tofu - 6 oz
  • Carrots - 2 pieces

Step by Step guide

Step 1

To prepare the ginger-soy sauce: Mix all ingredients in a small bowl.

Step 2

Boil the asparagus in boiling water for 3 minutes. Drain the water.

Step 3

Combine the vinegar, sugar, and salt in one bowl. Add the rice and mix well.

Step 4

Place a sheet of nori shiny side down on a bamboo mat or plastic wrap.

Step 5

Spread ½ cup of rice, leaving 1 cm from the edges of the mat. Sprinkle with 1 teaspoon of sesame seeds. Place 2 stalks of asparagus slightly off-center, add tofu and 2 tablespoons of carrots.

Step 6

Cover the rice edges with the nori sheet using the mat and roll tightly.

Step 7

Repeat the same with the remaining ingredients. Refrigerate for 3 hours.

Step 8

Cut the rolls into 6-7 pieces with a sharp knife.

Step 9

Serve with ginger-soy sauce.
