Sweet Indian Rice Pudding
Ingredients
- Rice - 2 glasses
- Dried Apricots - 1.9 oz
- Prunes - 1.9 oz
- Salt - to taste
- Vegetable Oil - 2 fl oz
- Sugar - to taste
- Cardamom - to taste
- Clove - to taste
- Cinnamon - to taste
- Saffron - to taste
Step by Step guide
Step 1
Heat vegetable oil in a pot, add the rice, and fry until golden brown.
Step 2
Add the dried fruits and spices (cardamom, cloves, cinnamon, saffron). Add salt and sugar to taste. Sauté for another 5-7 minutes, stirring occasionally.
Step 3
Pour in enough water to cover the rice by 2–3 cm. Bring to a boil and cook over high heat until the water evaporates to the level of the rice. Cover with a lid and simmer on low heat until fully cooked.
Step 4
Serve the pilaf in a mound on a platter.
