Sweet Onion and Cherry Tomato Sauce
Ingredients
- Olive Oil - 1 tablespoon
- Spanish onions - 2 heads
- Garlic - 5 cloves
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Red cocktail cherry - 14.1 oz
- Yellow Cherry Tomatoes - 14.1 oz
- Light Raisins, Seedless - 3.5 oz
- Brown Sugar - 1 tablespoon
- Muscat Wine - 2 tablespoons
Step by Step guide
Step 1
Preheat the oven to 428°F.
Step 2
Peel the onion and cut it into small cubes. Peel the garlic. Transfer to a heatproof skillet, drizzle with olive oil, season with salt and pepper, and place in the oven for 35–45 minutes, stirring until golden brown. If the skillet becomes too dry and starts to burn, add a little water. Reduce the temperature to 392°F, add the raisins, stir, and cook for another 8 minutes.
Step 3
Then add the tomatoes and sprinkle with sugar. Stir and cook for another 5–7 minutes, until the skins of the tomatoes begin to burst.
Step 4
Place the skillet with the vegetables over medium heat, pour in the wine, season with salt and pepper. Mix well and let the wine evaporate. Serve warm.
