- Cilantro leaves - to taste

- Mexican vegetable mix - 14.1 oz
- Vegetable Oil - to taste
- Canned tomatoes - 14.1 oz
- Guacamole - 4 tablespoons
- Sour Cream - 4 tablespoons
- Corn tortillas - 4 pieces
Step by Step guide
Step 1
Preheat the oven to 200°C. Boil the pumpkin and sweet potato according to the package instructions.
Step 2
Sauté the Mexican vegetable mix in 1 teaspoon of oil for 10 minutes, then add the chopped tomatoes.
Step 3
Simmer for 20 minutes until thickened and the vegetables are tender.
Step 4
Add the prepared pumpkin and sweet potato, and divide among 4 plates.
