Ingredients
- Sweet Potato - 14.1 oz
- Bacon - 7.1 oz
- Melted Cheese - 3.5 oz
- Panko breadcrumbs - 1.8 oz
- Wheat Flour - 2.1 oz
- Chicken Egg - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - 1 qt

Prepare all the ingredients.
Step 2
Peel the sweet potato and cut it into small pieces. Place them in a bowl, cover with plastic wrap, and microwave for 10 minutes, or until tender.

Cut the bacon into pieces.
Step 4
Mash the cooked sweet potato with a fork. Add the bacon. Season with salt and pepper, and mix well.
Step 5
Shape the mixture into croquettes.
Step 6
Make an indentation in the croquette, place a piece of cheese in the center, and shape it into a ball. Repeat the same process with the remaining croquettes.
Step 7
Crack the eggs into a bowl and mix until smooth. In two other bowls, place the flour and breadcrumbs. First, coat the croquette in flour, then dip it in the eggs, and finally roll it in the breadcrumbs.

Fry the croquettes in preheated vegetable oil at 356°F until golden brown.

Drain the cooked croquettes on a paper towel or a wire rack.

Serve hot.
