Ingredients
- Sweet Potato - 3 lbs
- Vegetable Oil - 8 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the sweet potatoes and trim the ends. Cut each tuber into 8-10 thin slices about 10 cm long. Set aside.
Step 2
Preheat the oven to the lowest temperature.
Step 3
Heat the oil in a heavy-bottomed skillet over medium heat. Fry the sweet potato in small batches, turning frequently, for about 3 minutes until golden brown.
Step 4
Remove from the oil with a slotted spoon or tongs. Place on paper towels and keep in the oven to prevent the sweet potatoes from cooling while you fry the remaining batches. Serve hot, sprinkled with salt and pepper to taste.
