Ingredients
- Young Carrots - 24 pieces
- Sweet Potato - 21.2 oz
- Milk - 17 fl oz
- 25% Cream - 17 fl oz
Step by Step guide
Step 1
Salt the carrots, drizzle with 50 ml of vegetable oil, wrap them whole in foil, and bake at 356°F for 25–35 minutes.
Step 2
Peel the sweet potato and boil it in a mixture of milk and low-fat cream, then mash it in a blender, adding a little more milk mixture to ensure the resulting puree is not too thick. Add sugar and salt to taste.
Step 3
Crush the feta cheese in a blender with the heavy cream until a thick cream is formed.
Step 4
Before serving, sauté the carrots in vegetable oil until lightly browned, then add honey and cook for another minute.
Step 5
On a plate, place the cold sweet potato mousse, top with the hot carrots, and then add the cheese cream, sprinkling with lightly toasted pine nuts.
