- Sweet Potato - 31.7 oz
- Coconut Milk - ½ cup
- Garlic - 1 clove
- Red pepper flakes - ¼ teaspoon
- Cilantro - 0.2 oz
- Sugar - 1 teaspoon
- Ground Black Pepper - a pinch
Step by Step guide
Step 1
Peel the sweet potatoes, cut them lengthwise into 4 parts, then into pieces about 0.5 cm in size. Place them in a large pot, add coconut milk, red pepper flakes, minced garlic, sugar, and salt.
Step 2
Cover with a lid, turn the heat to low, and cook, stirring occasionally, for 40 minutes. The sweet potatoes should fall apart when pierced with a fork.
Step 3
Remove from heat, mash with a potato masher, and sprinkle with ground pepper and chopped cilantro.
