Ingredients
- Avocado - 2 pieces
- Garlic - 2 cloves
- Spanish onions - ½ head
- Olive Oil - 2½ tablespoons
- Walnuts - 3 pieces
- Sweet Potato - 1 piece
- Black Pomegranate Molasses - to taste
- Smoked salt - ½ teaspoon
- Meyer Lemon Juice - 1 tablespoon
- Cilantro - 2 sprigs
- Ground Black Pepper - to taste
- Salt - to taste
- Feta cheese - 2 tablespoons
Step by Step guide
Step 1
Cut the sweet potato in half. Leave the skin on and make crisscross cuts on each half. Brush with olive oil, salt, and smoked paprika. Wrap in foil and place in a preheated oven at 392°F.
Step 2
After 30 minutes, open the foil and bake for another 20 minutes. If the sweet potatoes are small, less time will be needed. Do not overbake the sweet potato, as it becomes too soft and loses its flavor.
Step 3
Dice the avocado or mash it with a fork, add lemon juice, garlic (pressed), olive oil, cilantro, and finely chopped red onion. Optional: add tomatoes.
Step 4
Place the cooked sweet potato on a plate, top with the avocado spread, and sprinkle with crumbled feta, chopped walnuts, and pomegranate.
