Description
Rice can be boiled in different ways; I used the following method: rinse with boiling water, pour into a pot, and cover with cold water in a 2 to 1 ratio. Cook over medium heat, stirring occasionally. Wait for the water to evaporate, then remove from heat.

- Jasmine Rice - 8.8 oz
- Macadamia Nuts - 2.6 oz
- Dried Apricots - 2.6 oz
- Raisins - 2.6 oz
- Fresh Mint - 1 bunch
- Coconut Milk - 1 fl oz
Step by Step guide
Step 1
Boil the rice until cooked, rinse, and set aside to dry.
Step 2
Cut the dried apricots in half. Tear the mint leaves.
Step 3
Pour the oil into a skillet and heat on high. Add the nuts to the skillet and lightly toast.
Step 4
Add the chopped dried apricots and raisins. Sauté everything together until golden brown.
Step 5
Add the rice to the skillet without removing it from the heat, and stir the contents. Cook for 5–7 minutes over high heat.
Step 6
One minute before finishing, add the mint leaves to the skillet, stir, and remove from heat.
