Swiss Chard, Sweet Potato, and Pea Stew
Ingredients
- Sunflower Oil - 2 tablespoons
- Onion - 1 piece
- Cumin Seeds - 1 teaspoon
- Sweet Potato - 14.1 oz
- Dried Chili Pepper - ½ teaspoon
- Canned tomatoes - 14.1 oz
- Salted Peanuts - 4.9 oz
- Swiss Chard - 8.8 oz
Step by Step guide
Step 1
Heat 2 tablespoons of sunflower oil in a large skillet. Add 1 chopped onion and sauté until golden brown.
Step 2
Add 1 teaspoon of cumin and sauté until fragrant, then add 400 g of chopped sweet potato, ½ teaspoon of dried chili, 400 g of canned tomatoes, and 750 ml of water.
Step 3
Bring to a boil and simmer for 15 minutes.
Step 4
Meanwhile, blend 140 g of salted peanuts in a blender. Add the peanuts to the stew and taste, adding salt if necessary.
Step 5
Let it simmer for another 15 minutes.
Step 6
Add 250 g of coarsely chopped Swiss chard. Bring to a boil and then cover and simmer for 10 minutes until the Swiss chard is tender.
