Swiss Chard with Golden Raisins
Ingredients
- Swiss chard leaves - 1¼ kg
- Olive Oil - 1½ tablespoons
- Pancetta - 2 pieces
- Onion - 1 head
- Coarse Salt - to taste
- Chicken Broth - 4 fl oz
- Nutmeg - a pinch
- Raisins - 3.5 oz
Step by Step guide
Step 1
Roughly chop the red Swiss chard and add it to a hot skillet with olive oil. Sauté lightly.
Step 2
Add the chopped onion and pancetta to the skillet. Sauté for 2-3 minutes.
Step 3
When the onion becomes soft and the pancetta is browned, add the chopped Swiss chard stems to the skillet and continue to sauté for another 2-3 minutes.
Step 4
Add the raisins to the skillet and mix them with the Swiss chard.
Step 5
Pour the broth over the mixture, seasoning with salt and nutmeg. Bring the liquid to a boil, reduce the heat, and cook for another 15 minutes. Do not cook longer, or the greens may become bitter.
Step 6
Serve hot as a main dish or as a side.
