Swordfish with Fried Sauce
Ingredients
- Swordfish - 2 lbs
- Wheat Flour - 1½ tablespoons
- Cotton Oil - 8 fl oz
- Onion - 2 pieces
- Sherry - 2 tablespoons
- Fish Oil - 6 fl oz
- Capers - 1 tablespoon
- White Pepper (whole) - to taste
- Ocean salt - to taste
Step by Step guide
Step 1
In a non-stick skillet, sauté the flour, stirring constantly, until it turns brown, then set aside.
Step 2
In a large skillet, heat the corn oil. Place the steaks in it and fry for 5 minutes on each side, then remove the fish from the skillet and set aside.
Step 3
Drain most of the oil, leaving just enough to completely cover the bottom of the pan, but no more. Add the sliced onion and cook until translucent, stirring occasionally (about 5 minutes).
Step 4
Stir the sautéed flour into the oil in the skillet, then gradually add the fish stock and sherry in small portions (you can skip the sherry if you prefer — it's a matter of taste and availability). Season to taste with salt and pepper and continue cooking, stirring constantly, for a few more minutes.
Step 5
When the sauce starts to thicken, add the fish and simmer on low heat without bringing to a boil for 5 minutes. Stir in the capers, continuing to stir, and when they are heated through, serve the dish.
