Technically, it should be 'tapaka', but that’s just how it has evolved and become established.
Ingredients
- Poultry - 1 piece
- Salt - to taste
- Red Long Chili Peppers - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - 2 fl oz
- Butter - 3.5 oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Cut the chicken breast in half and open it up.
Step 3
Remove any possibly remaining internal organs, cut off the tail, and trim excess skin and fat.
Step 4
Unroll the carcass so that it becomes flat. Break the tendons and pound it.
Step 5
Sprinkle with salt and pepper, brush with vegetable oil, and let marinate for 30 minutes.
Step 6
Preheat the grill pan and pour in some vegetable oil.
Step 7
Place the chicken breast-side down, weigh it down with a heavy pot filled with water, and cook over high heat for 6-8 minutes, depending on the size of the chicken.
Step 8
Then remove the weight, flip the meat, and cook for another 5-6 minutes under the weight over medium heat, until a golden crust forms.
Step 9
Remove the weight again, flip the chicken over, and add butter.
Step 10
Sear the chicken for a couple more minutes on each side without the weight. Serve.
