Description
Svanetian mix (Svan salt) is a Georgian seasoning named after the region where it is produced, Svaneti. It consists of crushed spices mixed with coarse salt: fenugreek, saffron, cumin, coriander seeds, and dill. The composition of the mix can vary, often including garlic and hot red pepper as well. In the restaurant, the dish is served directly in a ketsi — a small clay pan.

- Dill - to taste
- Garlic - to taste

Step by Step guide
Step 1
Cut the chicken along the breast. Drizzle with vegetable oil. Rub the spices (preferably the Svanetian mix) inside and outside.
Step 2
Place the chicken in the pan, back side up. Send it to the preheated oven and roast until cooked through.
Step 3
Remove the roasted chicken from the oven. Cut into pieces.
Step 4
Drizzle with sour cream and garlic sauce. For the sauce, mix sour cream with finely chopped dill, minced garlic, and salt. Sprinkle with dill.
