Tabbouleh with Green Onions
Ingredients
- Bulgur - 1 glass
- Parsley - 1 bunch
- Scallions - 1 bunch
- Tomatoes - 4 pieces
- Meyer Lemon Juice - 1 fl oz
- Olive Oil - 3 spoons
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Soak the bulgur in boiling water in a 1:2 ratio and let it sit covered for 15–20 minutes.
Step 2
Whisk the lemon juice with oil, pepper, and salt until a smooth emulsion forms.
Step 3
Finely chop the green onions and parsley.
Step 4
Remove the seeds from the tomatoes and chop them finely.
Step 5
Add bulgur to the lemon-butter dressing and mix well.
Step 6
Add all the vegetables there. Mix well.
Step 7
Garnish with mint or parsley.
