Ingredients
- Couscous - 6.2 oz
- Tomatoes - 10.6 oz
- Parsley - 0.4 oz
- Mint - 0.2 oz
- Cilantro - 0.2 oz
- Lemon - ½ piece
- Raisins - 0.9 oz
- Spanish onions - 0.7 oz
- Romaine lettuce - 2.1 oz
- Olive Oil - 2 fl oz
- Water - 7 fl oz
Step by Step guide
Step 1
Pour 200 ml of boiling water over the couscous and cover tightly with a lid, let it steep for 15 minutes; spread the cooked couscous on a tray and cool in the refrigerator for 5 minutes.
Step 2
Soak the raisins in hot water, cover with a lid, and let steep for 3 minutes.
Step 3
Make a cross-shaped incision on the tomatoes and place them in boiling water for 1 minute, then cool in cold water and remove the skin.
Step 4
Finely chop the cilantro, parsley, and mint, dice the onion, and chop the tomatoes into larger pieces.
Step 5
Squeeze the juice from the lemon and mix it with 70 ml of olive oil, season with salt and pepper.
Step 6
Add the herbs, tomatoes, and raisins to the slightly warm couscous, pour in the dressing, mix thoroughly, and refrigerate for 5–10 minutes.
Step 7
Serve the tabbouleh piled on a plate, garnished with a lettuce leaf.
