- Watermelon - 21.2 oz
- Bulgur - 4.2 oz
- Kalamata olives - 2.8 oz
- White Balsamic Cream - 4 fl oz
- Herbs - 3.5 oz
- Spanish onions - 0.7 oz
- Pecan - 1.4 oz
- Olive Oil - 1 fl oz
- Pistachios - 1 oz
- Tarragon - 0.1 oz
- Shichimi pepper - 0.1 oz
- Ocean salt - 0.1 oz
- Feta cheese - 4.9 oz
- Milk - 2 fl oz
- 33% Cream - 2 fl oz
Step by Step guide
Step 1
Cut the fresh watermelon into cubes.
Step 2
Chop the Kalamata olives and red onion.
Step 3
Thinly slice the mint and spinach leaves.
Step 4
Layer the bottom of the plate with boiled bulgur, segments of olives, and onion.
Step 5
Sprinkle with tarragon and sea salt.
Step 6
Drizzle with white balsamic sauce.
Step 7
Prepare the yogurt mousse. To do this, blend 100 g of feta cheese with milk and cream until smooth.
Step 8
Layer the yogurt mousse (made with cream, milk, and feta), crumbled feta, and a mix of greens.
Step 9
Top it off with pecans, pine nuts, and shichimi.
Step 10
Add lemon zest and sea salt.
Step 11
Dress with white balsamic vinegar and olive oil.
