- Olive Oil - 1 fl oz
- Eggplants - 1 piece
- Red Long Chili Peppers - 2 pieces
- Harissa - 0 fl oz
- Spanish onions - 1 head
- Garlic - 4 cloves
- Grated Ginger Root - 1 piece
- Cinnamon - 1 piece
- Chickpea - 14.5 oz
- Baking Tomatoes - 14.5 oz
- Chicken Broth - 20 fl oz
- Sugar - 0.2 oz
- Passata Tomato Sauce - 0.5 oz
- Chopped Sage Leaves - 1.1 oz
Step by Step guide
Step 1
Heat the oil in a heavy-bottomed pan. Add the diced eggplant and cook for 5 minutes. Then add the finely chopped peppers and onion, and cook for another 5 minutes. Add the harissa sauce, garlic, and grated ginger, and simmer for another 2 minutes.
Step 2
Add the remaining ingredients, bring to a boil, and simmer for 15 minutes.
Step 3
Season with spices and sprinkle with parsley. Serve with hot couscous.
