Tagliatelle with Artichokes and Bottarga
Ingredients
- Artichoke bottoms - 3 pieces
- Shallot - 2 pieces
- Garlic - 2 cloves
- Olive Oil - 4 tablespoons
- Bottarga - 0.4 oz
- Green Tagliatelle Pasta - 10.6 oz
- Water - 1 fl oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Clean the fresh artichokes and slice them thinly; peel and finely chop the shallots; also finely chop the garlic.
Step 2
In a skillet, heat the olive oil and lightly sauté the shallots, add the garlic and artichokes, and sauté everything together for about 7–10 minutes, pour in the water, season with salt and pepper, and simmer covered for 15 minutes (the artichokes should become translucent).
Step 3
Meanwhile, crumble the bottarga and cook the tagliatelle.
Step 4
Add the cooked pasta to the skillet with the artichokes, mix, and sauté for 2–3 minutes.
Step 5
Serve the pasta with the sauce on plates, and sprinkle the finished pasta with bottarga.
