Ingredients
- Green Tagliatelle Pasta - 3.5 oz
- Pistachios - 0.7 oz
- Arugula - 1 bunch
- Garlic - 2 cloves
- Parmesan Cheese - 1.4 oz
- Olive Oil - 3 fl oz
- Onion - 3.5 oz
- Aspen mushrooms - 7.1 oz
- Marinated cherries - 3.5 oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
In a blender, combine a large bunch of arugula, nuts, garlic, a large pinch of sea salt, olive oil, and blend until smooth.
Step 2
Cook the pasta in boiling salted water according to the package instructions.
Step 3
Chop the onion, halve the cherry tomatoes and mushrooms. In a skillet, sauté the onion, mushrooms, and tomatoes, season with salt and pepper, and remove from heat.
Step 4
Remove the pasta from the water, mix with the arugula pesto, plate it, top with mushrooms and tomatoes, and grate Parmesan on top.
