Ingredients
- Green Tagliatelle Pasta - 7.1 oz
- Parmesan Cheese - 0.9 oz
- Pickled Chanterelles - 7.1 oz
- Butter - 0.7 oz
- Parsley - 0.2 oz
- Garlic - 1 clove
- Olive Oil - 0 fl oz
Step by Step guide
Step 1
Rinse and dry the chanterelles, cut the larger mushrooms into pieces, crush, peel, and finely chop the garlic.
Step 2
Cook the tagliatelle in salted and oiled water for 3 minutes, then drain them in a colander, reserving the water.
Step 3
Sauté the garlic over medium heat in a mixture of butter and 2 tablespoons of olive oil for 1 minute.
Step 4
Add the chanterelles, season with salt and pepper, and sauté for 4 minutes.
Step 5
Grate the cheese into large flakes and finely chop the parsley.
Step 6
Add the pasta to the mushrooms, pour in 100 ml of the pasta cooking water, and sauté together for another minute. Season with salt to taste.
Step 7
Arrange the pasta on plates, sprinkle with Parmesan cheese and parsley, drizzle with olive oil, and serve.
