Tagliatelle with Green Peas, Watercress, and Parmesan
Ingredients
- Green Tagliatelle Pasta - 17.6 oz
- Frozen green bean pods - 10.6 oz
- Vegetable Oil - 2 tablespoons
- Garlic - 2 cloves
- Cream - 4 tablespoons
- Watercress - 2.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - 1.4 oz
Step by Step guide
Step 1
Cook the pasta (I used Rollton egg noodles) in salted boiling water for 8-10 minutes until soft. Two minutes before it's done, add a third of the peas. Reserve the cooking water.
Step 2
Meanwhile, place the remaining peas and garlic in another pot, add the oil, season with salt and pepper. Cover and cook for 5 minutes, then add the cream and watercress and cook for another 2 minutes. Blend until smooth, adding 125 ml of the pasta cooking water. Season with salt and pepper to taste.
Step 3
Drain the pasta, mix with the sauce, and sprinkle with Parmesan. Serve immediately.
