Tagliatelle with Zucchini and Parmesan
Ingredients
- Green Tagliatelle Pasta - 10.6 oz
- Courgette - 3 pieces
- Butter - 0.4 oz
- Thyme - 1 teaspoon
- Lemon - ½ piece
- Chili Flakes - ¼ teaspoon
- Crème fraîche - 3 tablespoons
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - 1.1 oz
- Coarse Salt - to taste
Step by Step guide
Step 1
Cook the pasta in boiling salted water until al dente.
Step 2
Meanwhile, slice the zucchini into thin long strips.
Step 3
Melt the butter in a skillet over medium heat. Add the zucchini, chopped thyme, and chili flakes, and sauté until the zucchini is tender. Season with a little pepper and add the zest and juice of half a lemon. Cook for a little longer until most of the liquid evaporates.
Step 4
Remove from heat and add the crème fraîche and about three-quarters of the grated cheese.
Step 5
Drain the pasta, reserving a bit of the water, and toss it with the zucchini. Sprinkle with cheese and serve.
