Ingredients
- Pide bread - 2 pieces
- Olive Oil - 3 fl oz
- Tomatoes - 4 pieces
- Courgette - ½ piece
- Scallions - 3 stalks
- Cilantro - 0.7 oz
- Feta cheese - 3 oz
- Meyer Lemon Juice - 2 tablespoons
- Rice Vinegar for Sushi - 1 tablespoon
- Sugar - 1 teaspoon
- Ground coriander - ¾ teaspoon
Step by Step guide
Step 1
For the dressing, mix lemon juice, vinegar, sugar, and ground coriander in a bowl. Gradually whisk in 2 tablespoons of olive oil until a smooth mixture forms. Season with salt.
Step 2
For the salad, preheat the oven to 374°F. Split the pita into two thin round flatbreads and cut each into thin triangles. Brush with olive oil. Bake in the oven for about 10 minutes, until golden brown. As they cool, the pita pieces will become crispy.
Step 3
Place the tomatoes, cucumber (remove seeds), and green onion in a large serving bowl and mix with the dressing and herbs. Crumble the feta on top, then add the pita triangles. Toss and serve immediately, accompanied by warm naan bread.
