Ingredients
- Rack of Lamb - 31.7 oz
- Black Cumin (Cumin) - 1 tablespoon
- Garam Masala - 1 tablespoon
- Garlic - 8 cloves
- Grated Ginger Root - 0.7 oz
- Malt Vinegar - 2 fl oz
- Natural Yogurt - 4 fl oz
- Cayenne Pepper - 3 spoons
- Red Food Coloring - 1½ spoons
- Cardamom - 2 spoons
- Nutmeg - 1 tablespoon
- Lemon - 1 piece
- Butter - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the ribs in a deep baking dish. In a skillet, sauté cumin and garam masala for thirty seconds, then let cool. Grind into a powder. Blend garlic and ginger in a blender, then add cumin and garam masala, yogurt, vinegar, cayenne pepper, cardamom, food coloring, nutmeg, salt, pepper, and lemon juice. Pour over the ribs and refrigerate overnight.
Step 2
Preheat the grill. Cook the ribs on both sides for twenty minutes. Let them cool slightly and drizzle with melted butter.
